*There are a lot of ways to make this special soup of Nigeria, but i want to share with you all my own version.* wink* Hope you enjoy it!
*Recipe*
*Grand ogbono 1 cup
*Red oil 1/2 cup
*Fresh pepper 1
*salt
*200-250g dry catfish
*Cow tail or any one of your choice
*100g dry bitter leafs
*4-5 maggi cubes (stock)
*2 medium onion chopped
*100g crayfish grand
*100g oporo
*ogili (optional)
*Any other ingredients of your choice.
Direction:
*Stem the meat with cubes, pepper, salt and onion.
* Place the dry catfish on a bowl with a hot salted water. Do the same with oporo in another bowl.
*Add the bitter leaf on a little sauce pan with water; bring the bitter leafs to boil.
* Place a sauce pan over the heat, add the red oil, chopped onion.
*Allow the onion to cook for 4 minutes. Add the ogbono. Stir until the ogbono is well melted.
*Add the stemmed mea together with the stock. season with salt, pepper, cubes. If the stock from the meat is not enough, add more water to it.
*Add the crayfish and stir.
*Remove the oporo from the hot water, wash with cold water and add to the cooking soup.
*Wash the bitter leafs and add to the soup.
* Remove the catfish from the salted water and wash with a fresh water.
*Add the fish and stir. Allow them to cook for a 4 minutes without cover.
*Serve with any swallow of your choice.

I totally love ogbonno. My husband not so much. Egusi is his absolute favorite. I always wanted to try using fried fish in my ogbonno! Will definitely give it a try
